Soup’s On!

The last few days I have been really hungry for soup. I’ve been looking at different soup recipes trying to find one that sounds really  good at the same time as being healthy. I am trying to boost protein and fiber in my diet and eat plenty of veggies. On my search I not only found one that sounded good, I found THREE! Instead of choosing just one to make, I decided to make all three.

Today was the day, I went to the store and gathered the ingredients and set to work! As with almost all recipes I kind of stray from it and do my own thing. That way I feel like I can call it my own. 😉

Here are the chosen soup recipes:

Spicy Mexican Sweet Potato, Black Bean, & Rice Soup –

This soup has a unique flavor that makes you slow down and savor it!

Black Bean Chili with Rice –

This is really good, I went ahead and mixed the rice in and it is really thick almost like a jambalaya. Love it!

I am looking forward to eating from my soup buffet this week. Something about soup just speaks cozy to me.

The way of life…

Recently I changed how I live.

I have a saying, “I come by my figure honestly.”

This is a true statement. Before now I gave very little thought to healthy eating and exercise. When I thought of food it was “What sounds good?” and “When am I going to eat it?”  Which is why I have the figure I have today.

I finally got to the point where I didn’t want to be this person anymore. I joined a 24 hr. gym and have been going almost daily now since february. I also changed my diet drastically. No more fast food, pizza or all the other bad for me stuff my diet was made up of before. Now I mostly eat fruits and veggies, nuts, sweet potatoes,  chicken, turkey and some fish.

I find I enjoy finding healthy recipes that take place of the old unhealthy ones, some of my favorites?  spaghetti made with spaghetti squash instead of noodles and oatmeal pancakes with butter and organic peanut butter on top are two of my favorites so far. I have also found that low-fat cottage cheese works well as a sandwich spread. I’ve come to realize that healthy eating doesn’t have to be boring old rabbit food, you get the right mixture and it can be quite tasty.

I realize for a long-lasting effect I need this to not be a diet but a way of life. I’m not quite ready for a before and after picture but I’ll get there. 🙂
